Sweet Potato Picnic Salad

Sweet and savory with the fresh crunch of apple and celery, this salad will be the talk of the picnic or potluck.

Directions
  1. Cook the bacon in a large skillet until crisp. Drain on paper towels and reserve 2 Tbsp. of the drippings (or use 2 Tbsp. vegetable oil instead of bacon drippings).
  2. Meanwhile, drain the sweet potatoes well in a colander. Cut into 1-inch chunks and set aside.
  3. Combine the reserved drippings or oil, vinegar and chili powder in a large bowl; mix well. Add the green onions, apple and celery; mix well. Add the sweet potatoes and gently toss the salad two or three times. Crumble bacon on top, cover and refrigerate until serving. Just before serving, gently toss bacon into the salad.

NOTE: Recipe can be doubled.

1/2 tsp. chili powder or hot pepper sauce

3/4 cup sliced green onions
