Mashed Sweet Potatoes

Mashed or whipped, these potatoes can wake up weeknight meals in 10 minutes.

Directions
  1. Heat potatoes in a medium saucepan over medium-high heat to evaporate any excess syrup, about 3 to 5 minutes, stirring frequently.
  2. Add butter, sour cream, salt and pepper. Heat until butter is melted. Remove from heat and mash with a hand masher or beat with an electric mixer at medium high speed to desired texture.

NOTE: Recipe can be doubled.

VARIATIONS: Add a twist of flavor. Prepare recipe as directed, except add your choice of flavor twists with butter in Step 2:

  • Bacon - ½ cup cooked, crumbled bacon (about 4 slices)
  • Chipotle - 1 tsp. finely chopped chipotle in adobo sauce
  • Vanilla Spice – 1/2 tsp. vanilla + 1/8 tsp. nutmeg
  • Garlic Cheddar – 1/4 tsp. garlic powder + 1/2 cup shredded cheddar
  • Brown Sugar Cinnamon - 2 Tbsp. brown sugar + 1/4 tsp. cinnamon
  • Savory Cheddar – 1/2 cup shredded cheddar + 1/4 cup sliced green onion
  • Apple Cinnamon - 1 diced, peeled apple + 1/4 tsp. cinnamon
  • Zesty Orange - 1 tsp. orange zest
